Look what I'm making!

This is soooo yum! My house smells delish too. It was originally a blueberry buckle recipe that I got from my SIL but I usually don't have blueberries on hand and always have canned peaches here so I started making it that way and like it better. It is kind of like a peach cobbler.



Peach Buckle

¼ Cup Margarine, softened
¾ Cup Sugar
1 Egg
1 ½ Cup Flour
2 Tsp. Baking Powder
½ Tsp. Salt
½ Cup Milk
2 Cups peaches, chopped

Cream butter and sugar. Blend in egg. Add dry ingredients and milk. Gently fold in peaches. Can used canned, but drain first. Another option is to used drained canned blueberries. Pour batter into oiled and floured 8x8" pan. Sprinkle with crumb topping.


Crumb Topping

½ Cup Sugar
1/3 Cup Flour
½ tsp. cinnamon
¼ Cup Margarine, softened

Mix together until resembles coarse crumbs. Bake at 350 degrees for 40-45 min. Serve warm with whipped topping or ice cream.

To be honest here... the photo is lifted off of food network. They do such a nice job of making food look good! Thanks for the compliment on my cooking though Ü
